Vegan Choc-Coconut Protein Mousse
Serves 2 to 4 people
Ready in 10 minutes
400 ml can coconut cream (preferably organic)
1/2 ripe avocado
4 tbsp. raw cacao powder
1 tbsp. xylitol
1 tbsp. vegan protein powder (e.g. Lifematrix brown rice protein powder)
1/4 tsp. cinnamon
1 tsp. vanilla extract
3 fresh strawberries, sliced
1 tbsp. cacao nibs
Place all ingredients in a food processor and blend for 3 to 4 minutes until well combined. Mixture should thicken gradually. Pour mixture into 4 small wine glasses or dessert bowls. Top with raw cacao nibs and sliced strawberries. Chill in the fridge for at least 3 hours, or until firm. Serve chilled.
